Vegetarian Fish Sauce

For a long time now, I have been wading through the Internet trying to get a recipe for vegetarian fish sauce. Vegetarian and fish – ridiculous isnt it ? Well, I got this notion that adding the sauce would make my chinese noodles better. I stubled upon one recipe recently – so here goes …

Vegetarian Fish Sauce is a mixture of soy beans, salt, sugar, water, chilli, and citric acid which acts as a preservative. I make my own Veg Fish Sauce when I am short of strore bought by adding ½ cup Soya Sauce+1 tbsp Sugar+1 tbsp Red Chilli Paste+ ¼ tsp Citric Acid/1 fresh Lime Juice.

Time to make chinese noodles.

I love Thai cusine. The best Thai curry sauce we had used was from Traders Joe but I realized that one bottle would last for just 2 servings. So I was pretty determined to make it from scratch but didnt know how until I came across the Thai recipe’s and explanation of the ingredients from the Jugalbandhi food blog. It was exactly what I was looking for. I had to goto the Chinese Ranch market to get the Thai eggplant, Kaffir lime leaves and Galangal. When I started off on the recipe, I really did not know what to expect. I had a feeling the number of chillies would make the recipe too hot but I was in for a surpise. I used 6 New Mexico chillies and 3 fresh Red chillies. I soaked the New Mexico chillies in hot water and squeezed them dry. Doing this removes pretty much all the seeds from them and the New Mexico chillies are not too hot. In fact, when the veggies were cooking, I added the traditional India red chilli powder to make it a little spicy. For vegetables, I used onions, beans, carrots, cauliflower, brocolli, peas, red peppers, bamboo shoots and baby corn, No bean curds used. I strictly followed the procedure outlined and the end product was awesome. No coloring needed to make it red. It had the authentic thai taste to it and we all enjoyed eating it. The only mistake I did was to use Basmati rice. Thai jasmine rice is what goes best with the recipe and the next time around, I am going to stay away from Basmati rice.
